In high season it is best to book to taste the chef's specialties, which unsurprisingly are all focused around local fish and shellfish, combining French and Saintoise cuisine with largely local produce grown on the island and fish caught off Les Saintes. Just a glance of the menu will take you on a journey of flavours, with Caribbean tuiles de tapas, lobster ravioli with fermented vegetable juices, swordfish carpaccio with Roquefort and grilled chorizo, roasted lobster à l'antillaise, and the chef's specialty: choucroute de la mer, a seafood stew.
These inventive dishes will keep you smiling all the way through to the end of your dessert. If you go to Les Saintes, do not resist this wonderful culinary stopover.
